I listened to some Pat Metheny and it was pretty good. Next I'm gonna try listening to Wes Montgomery.
Question:Were the Seatbelts the group that made some songs for Cowboy Bebop?

yoko kanno is the mastermind behind the cowboy bebop music (and wolf's rain - even greater soundtrack if you ask me), but the seatbelts were the band used for most of the bebop music.

Real good list there. I'd add some stuff from Stan Getz, Charlie Parker, and Duke Ellington. Lately I've been getting into this really talented young pianist from the Ukraine named Eldar Djangirov. Check him out.
And as long as we're talking about stuff that's not "real" jazz (Cowboy Bebop), I really like the experimental jazz stuff on the Chrono Trigger: The Brink of Time arranged album. Anyone know of any artists that have a similar sound?

I thought that Chrono stuff was good... The first track especially. A few songs are a bit lacking and empty though. A good listen, of course
