Also, B.B. King is really good. As for jazz, I enjoy Japanese jazz fusion bands like Casiopea and T-Square (aka The Square in some cases  )

That should get you started.
Other famous jazzers to consider: Dave Brubeck, John Coltrane, Count Basie... I mean... the list goes on forever.

If you're interested in hearing good blues Chicago in general is great for it. Kingston Mines is great and there's also Buddy Guy's Legends in the loop. (you should also check out Buddy Guy) I've been to Kingston Mines but only was in Buddy Guy's Legends to fill out an application, but they had a blues guitarist there playing in the middle of the day on a Tuesday which means you could probably always find someone playing there.
