My favorite is Impossible Germany by Wilco, preferably from their live performance on Austin City Limits last year.

The entire damn song is one big solo. The best part of it is when the guitar syncs up with the drums near the end of the song, like BAH-BAH-BAH-BAH-BAH-BAH!! = BEND-BEND-BEND-BEND-BEND-BEND!!

Solo at 3:00, although it's important to understand its context. It's not complex, structurally or technically. The [i]performance[/i] is equally as important as the notes and structure, not to mention the [i]tone[/i]. I believe the performance is nigh impossible to recreate, and the solo says exactly what the lyrics do.
