Does more watts just mean that an amp can make more sound or does it mean better sound quality, sustain, etc. ?

I don't really know much about technical stuff, but usually more watts means louder. I don't think it has that much effect on other things. However, keep in mind that tube amps are louder than solid-state. My 40 watt Fender Hot Rod is louder than solid-state amps with 80 or 100 watts.

Wattage is just what it takes to power the amp. That's why there's less watts for tube. Tube requires less wattage to run at a certain volume than solid state. The volume depends on the amp.

More watts will generally give you more loudness, but bigger speakers are what you're looking for for better tone. Regardless of the amp's size, below 50 watts of solid state won't cut it for shows.
