Pedro the Lion truly is awesome, my favorites include Indian Summer and Rapture.

Here's my list, in no order, and liable to change, but I have my core favorites bolded, likely to never change.

Indian Summer and Rapture are great. I was just listening to Rapture earlier today, in fact.
It's a shame David Bazan isn't more famous. He's been producing quality music under numerous monikers over the past 15 years or so. It blows my mind that he hasn't gained wider recognition.

Indeed, I like his other project too, post PTL, however the name escapes me at the moment...Headphones maybe?
His voice is really great and the guitar work is fun.

EDIT: Just going to drop these links right here because as I reread my list, I realized more people need to know Karate. Crazy good jazz/fusion.

Yep, Headphones. He only put out one album under that name, but it was really damn good.

Then we'll throw in some people that are primarily composers:

I'll hold off on honorable mentions, as I'd probably end up at about 50.

Simoun's OST is a work of bliss.

The Big O OST incorporates a lot of the facets of his general "sound", but there's no other singular work he's composed that's quite like it because of all the retro tv/films that influenced the soundtrack.

There's also a lot of great stuff Gundam Seed/Seed Destiny OSTs. The best examples from that would certainly be from the two albums of that music he arranged for the London Symphony Orchestra;
