anime fans that come together to sub shows are actually really good at it though. Maybe we could convince one of those organizations to do it?

Yeah, you don't have the licenses and rights to get this professionally subtitled. If you hire a "professional" to do it and they actually accept the offer, then both parties become liable to be sued by King Records, Bad Music Group, Delicious Label, etc.
That's why fansubs exist.

Sued for what? If they just transcribe the video on a text file or something like that, I don't see there being a problem.
